British Charcuterie
Made from free-range, rare-breed pigs born and raised on our farm in Somerset for the sole purpose of making delicious cured meats.
Pigs
Everything starts with our rare-breed pigs. We breed and raise Mangalitsa and Gloucester Old Spot pigs for their dark marbled meat and the all-important fat.
Our pigs are kept in family units to develop slow, stress-free lives. Free to roam across pastures and woodland for over a year, our pigs grow and put on weight naturally to develop a rich flavour.
Production
We make all our charcuterie at our farm in Somerset. Our purpose-built food production facility allows us to keep food miles to an absolute minimum.
We source all our herbs and spices from quality Fairtrade and Organic suppliers based in Somerset.
Sustainability
Curing meat takes time and energy! Temperature, air flow and humidity control is important.
At Heritage Cure we generate 90% of our own electricity and 100% of our water comes from our own spring on the farm.
